I talk basil and give my pesto recipe on the front page of this week’s food section of the Athens Banner-Herald.

  1. Pesto was a mystery for many years…until I joined the CSA and had to do SOMETHING with all the damn basil. I found that, as long as you had plenty of basil, pesto was easy as pie to make and kept quite well in the freezer. Last year it was hard to collect enough leaves to make pesto, though I experimented with freezing the leaves themselves until I had enough to make a batch (mixed results, but edible). I like to use walnuts. This year, early severe weather gutted the six basil plants we had set up, so unless I get on the situation soon…there’ll be only store bought pesto this season. The good news is, though, greatly thinning out the tomatoe plants from last year’s set up has yielded great results and we should have our first fresh tomatoes this week.

  2. The author has written about the plays I’ve directed several times, and she ran across my stand at the farmers’ market a few weeks ago. Then she called me up and interviewed me, just like that. And I know so much about basil because I like to know things about my food. Especially when I grow it.

  3. Hey Eric, how did you come to be interviewed? And how did you get to know so much about basil?
